    Zucchini, baby, 1 large
    *Potato, raw, 5 large (3" to 4-1/4" dia.)
    Onions, raw, 2 large
    Egg, fresh, 4 large
    Garlic-minced , 4 tsp
    *Flour, white, 4 cup
    Salt, 1 tsp
    Pepper, black, 1 tsp
    *Canola Oil, 0.33 cup


Peel, deseed and grate zucchini.
peel and grate potatoes.
peel and grate onions.
Mix all together.
ad eggs, garlic, salt and pepper (as desired). Mix well.
Add flour until you reach a pancake consistency.
Preheat oil. Drop batter by 1/3 cp into batter.
Fry in oil until browned on both sides. Sprinkle with salt and pepper as desired.
Top with butter spray.

Serving Size: Makes approximately 25 pancakes
