Introduction
Adapted from a Weight Watchers recipe for baked chicken fingers. These are great with honey mustard for dipping, and also great in a chef salad. Ingredients

1 large egg
1 tsp lemon juice
1 tsp cornstarch
1 cup breadcrumbs
1 cup very finely chopped pecans
3/4 tsp salt
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp paprika
1/4 tsp ground red pepper(optional)
1/4 tsp ground black pepper
1 pound chicken breast tenders
2 tbsp extra light olive oil for sauteeing
Directions
1) Combine 1st 3 ingredients in a shallow dish such as a pie plate; stir well. Combine breadcrumbs & next 7 ingredients in another shallow dish.
2) Dip chicken tenders in egg mixture, then dredge in breadcrumb mixture, pressing firmly to coat.
3) Heat olive oil in a large skillet over medium high heat. Sautee chicken tenders until well browned on both sides, & no longer pink in the middle.
4) Serve with honey mustard or favorite dipping sauce.
Serving Size: Approx. 2 tenders per serving
