Ingredients

Ladyfingers (48 - 62)
2.5 C strong coffee
1 tsp espresso powder
9 T rum
24 oz mascarpone
6 egg yolks
2/3 C sugar
1/4 tsp salt
1 C heavy cream
Directions
- Beat egg yolks in mixing bowl with sugar and salt until thick and pale yellow.
- Add 4 T rum
- Add the mascarpone and mix thoroughly until well incorporated but do not overmix.
- Scrape the mixture into another larger bowl.
- To the used bowl, add the cream and mix until stiff peaks form.
- Fold 1/3 of the whipping cream into the mascarpone mixture to lighten then fold in the rest until no white streaks remain.
- Mix the cooled coffee with 5 T of rum.
- Quickly dunk the bottom of each ladyfinger in the coffee then lay in a 9 X 13 pan in rows, trimming as necessary to get a nice fit.
- Spread a layer of mascarpone over the ladyfingers.
- Dust with 2 T of cocoa.
- Repeat the process with another layer of ladyfingers and mascarpone mixture.
- Dust with 1.5 T cocoa.
- Cover with plastic wrap and refrigerate 6 - 24 hours.
