    1 lg eggplant
    2 lg green bell peppers
    1 16 oz can cubed tomato
    2 tbsp olive oil
    salt & pepper to taste


1. grill or bake the eggplant & peppers until tender.
2. remove skin and seeds from peppers, and skin from eggplant.
3. cut into small pieces and place in bowl.
4. Drain liquid from can of tomatoes and add to bowl.
5. Add oil salt and pepper to taste.
6. toast flat bread then cut into pieces.
serves about 12

  • Added 1 large yellow onion, chopped, and 3 minced garlic cloves...sauteed in a bit of olive oil...also basil, thyme, oregano, and a pinch of rosemary. - 3/24/08
