Number of Servings: 14


    2 lbs of Boneless, Skinless, Chicken Breast
    2- (15 oz) cans of White Corn (drained)
    2 (15 oz) cans of Cannellini Beans (rinsed and drained)
    1 (7oz) can of diced Green Chilies
    2 (10.75 oz) cans of 98% Reduced Fat Cream of Chicken Soup
    1 (10.75 oz) can of Chicken broth
    1 tsp of cumin
    2 tsp of oregano
    1 tsp of chili powder
    1 tsp of white pepper
    1 whole bay leaf
    1 cup of reduced fat sour cream


Place whole chicken breasts in the bottom of a large crock pot.

Pour beans and corn over chicken.

In a separate bowl, mix broth, soup, chilies and spices. Add mixture to crock pot.

Makes 14 - 1 cup servings

Cook on high 4-6 hours or low 8-12 hours

Prior to serving, remove chicken from crock pot and fork shread or cut into bite sized pieces.

Add sour cream to crock pot mixture and stir until smooth.

Add chicken back to crock pot and serve.
