    1/4 C. All Purpose Flour
    2 T. Chopped fresh Thyme or 1 tsp. ground
    4 lb. Beef Bottom Round - Trim fat
    2 T. Oil
    2 Large Onions, thinnly sliced
    2 Cloves Garlic. minced
    3 C. Swanson Beef Broth, fat free 50% less Sodium
    12 oz. Red Cooking Wine
    2 C. Water
    3 Potatoed, chopped
    3 Carrots, sliced
    4-6 T. Tomato Paste, depending on taste


combine flour, thyme, & salt/pepper to taste, (I don't use salt)
Roll roast in flour mixture to coat; Reserve remaining mixture.

In a Large Pot, over medium heat, brown on all sides in hot oil.

Transfer meat to a plate. Add sliced onions & garlic to Pot; reduce heat to low & cook 10 min., stirring frequently. Stir in beef broth, water, tomato paste & wine. Add meat; increase heat to med/high & bring to boil. Reduce heat to medium, partially cover & simmer 2 1/2 hrs., turning meat occasionally.

Add Potatoes & Carrots & cook 30-60 min. longer or til meat is tender.

Remove beef & transfer to Platter.
Whisk remaining flour mixture & 3 T. water. Stir into sauce in Pot, cook, stirring until thickened.
