    protein source (either tofu or ground turkey) about 1 1/2 lbs
    spices: cumin, salt, pepper, cinnamon, smoked paprika

    large can diced tomatoes
    can of corn (strained)
    can of black beans (strained)
    two cups of brown rice (cooked)
    one onion, 2-3 garlic cloves

    corn tortillas
    shredded cheese
    large jar of salsa

    So, Ben makes this up every time so it's all to taste and use your own judgment. He basically browns the meat with onion and garlic, then adds the spices. Then he dumps everything (except cheese, tortillas and salsa) in a big bowl and mixes it up, adjusting the balance and adding more of one or another ingredient if needed. Add salsa if it seems too dry.

    Then in a 9x11 pan he dumps some salsa on the bottom so it won't stick, puts filling (lots) into each corn tortilla and lines them up in the pan till the pan is full. He tops it with salsa and cheese on top. Cover with alum foil and it can be frozen. Bake 350/375 for 30 min till bubbles on sides, then take off top for last 5-10 min. You're basically just heating through, since it's all cooked already.
