    1.5 lb. boneless lean beef, cubed
    1 Tbl. Olive Oil
    1 tsp. salt or seasoned salt
    .5 tsp. pepper
    3 cloves garlic, minced
    8 cups beef broth
    3 large stalks celery, chopped
    6 large carrots, sliced
    1 medium onion, chopped
    8 oz. sliced fresh mushrooms
    1 8 oz. can tomato sauce
    1 14.5 oz. can diced tomato
    1 tsp. dried thyme
    1 cup pearl barley


In skillet over medium heat, sauté the beef in olive oil for 5 minutes, or until browned. Stir in salt, pepper, and garlic, then place seasoned meat in slow cooker. Add remaining ingredients. Cover and cook on low setting for 6 to 8 hours, or until barley and vegetables are tender. Makes ten 2-cup servings.

Can be prepared the night before by browning beef, adding all ingredients to crock pot, and refrigerating. Remove from refrigerator and cook in crock pot the next day.
