    1 Organic chicken breast
    1 tbs olive tapenade
    1 tsp cumin
    1 tbl Coconut oil (to fry chicken)
    dab of olive oil (for coating chicken)
    pinch sea salt
    pinch ground black pepper
    dab of olive oil (for coating chicken)
    Sesame seeds
    Sesame seed oil


Wrap chicken breast in plastic. Pound with mallet until flat and uniformly shaped. Season with cumin, salt, pepper and olive oil on both side. Add 1tsp olive tapenade until one side of the chicken is coated.

Meanwhile, melt coconut oil in grill or frying pan. When hot, add chicken breast tapenade side down. Cook for 3-5 minutes on each side.

Place cooked chicken on plate. Cook broccoli in same pan for 1 minute to a minute and a half until tender but still al dente. Place on plate with chicken. Sprinkle chicken and broccoli with sesame seeds and dress with sesame seed oil and .5 tsp of tapenade.

Feel free to add other veggies of your choice or side salad. Delicious and low-carb.
