Number of Servings: 12


    1 T flax seeds
    1 c strawberries
    1 c quick oats
    1 c lowfat buttermilk
    1 c whole wheat flour
    1 t baking powder
    1/2 t baking soda
    1 t salt
    1 whole egg
    1/4 c unsweetened applesauce
    1/3 splenda brown sugar blend
    1 t vanilla extract


Heat oven to 375 and line muffin tin. Chop 1 c of strawberries. Add room temperature buttermilk to oats. Combine egg, sugar, apple sauce and vanilla in bowl and beat for 3 minutes until light and fluffy. Add all dry ingredients in separate smaller bowl and stir. Next add sugar/egg mixture to oats, add strawberries and then add the flour mixture and gently fold in until blended. Spoon into tins 3/4 full and bake for 20 minutes or until springy.
