    2 TBS Canola oil
    3/4-1lb diced pork
    1 green pepper, sliced
    1 onion, sliced
    4 great value burrito size tortillas
    1 cup shredded colby jack


Pour 2 TBSP Canola oil in skillet, heat on med-high. Add diced pork, sliced onions and peppers, season to taste. Cook thoroughly.
In another skillet on med high, spray with cooking spray, place on tortilla in, add 1/4C shredded cheese, half of pork mix, and 1/4 C shredded cheese and top with another tortilla. Flip to brown top side. Repeat with remaining ingrediets for 2 large Quesadillas.

Serving Size: 2 large quesadillas; can be split into 4
