Ingredients

    1 1/2 cup strong coffee- I used decaf
    5 Tbsp mollases
    3 cloves garlic- minced
    1 jalapeno pepper- minced
    1 tsp salt
    1/4 tsp pepper
    1 1 lb pork loin trimmed of fat.
    cooking spray


Directions

Combine the first 6 ingredients in a heavy duty zip lock type bag. Add pork, seal and marinate in fridge 8 hours. Turning occasionally.

Prepare grill

Remove pork from marinade and discard marinade. Place pork on a grill rack coated with cooking spray. Grill 8-9 min on each side until temperature reaches 160. Remove pork from grill. Cover and let sit 10 minutes. Cut pork into thin slices. Yeilds 4 3oz servings.
