    2 tbsp Teriyaki Sauce (can substitute ketchup)
    2 tbsp Lime Juice
    1 tbsp Apricot Preserves
    2 tsp Peanuts, dry-roasted
    2 tsp Brown Sugar
    1 tsp Soy Sauce
    1/4 tsp chopped garlic
    1/4 tsp Crushed Red Pepper
    2 Eggs, fresh
    6oz Chicken Breast, no skin
    1 1/2 cups Bean sprouts
    3/4 cup Scallions
    6oz Angle Hair Pasta, Whole Wheat


Cook pasta.

In a small bowl, combine teriyaki (or ketchup), lime juice, preserves, peanuts, brown sugar, soy sauce, garlic, and crushed red pepper. Stir thoroughly and set aside.

Spray a wok or large skillet with nonstick spray and bring to medium-high heat on the stove. Add the eggs and scramble until fully cooked, about 2 min. Transfer to a bowl and set aside

Remove wok/skillet from the head (clean if needed), re-spray, and return to medium-high heat. Add chicken and season with salt and pepper. Add bean sprouts, scallions, and 2 tablespoons water. Stirring occasionally, cook until chicken is no longer pink and veggies are tender, about 4 minutes.

Add sauce to wok/skillet, stir to evenly distribute, and continue to cook until sauce is hot, for about 2 minutes. Add scrambled eggs and noodles, mix well, and continue to cook until contents are hot and chicken is fully cooked, about 3 minutes.

If you like, season to taste with additional crushed red pepper and cilantro.
