The basic Tofu Breakfast Scramble The basic Tofu Breakfast Scramble
Number of Servings: 3


    1 Block Extra Firm Tofu pressed
    1C Diced Potato
    1C Frozen Spinach
    1tsp Ground Tumeric
    1tsp salt
    1/2tsp pepper


Steam potatoes for 3 minutes. Crumble tofu into a bowl either by hand or with a wisk. Set pan over medium high heat, spray with cooking spray and add potatoes. Cook for 3-4 minutes until potatoes start to cook through. Add crumbled tofu and stir. Add Tumeric, Salt and Pepper. Continue to cook tossing frequently until potato cooked through and tofu warmed.

Serving Idea: enjoy alone, sprinkle w/ Dayia cheese, put in low carb tortilla wrap (calories not included in calculation)
