Ingredients

2 eggs
1/2 C. oil
1/2 C. applesauce
1/4 C. brown sugar
1 T vanilla
2 C. cantaloupe, pureed
3 C. four
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon (I used allspice b/c that is all I had)
Directions
Preheat oven to 350 degrees. Grease your cooking dishes.
In a medium bowl whisk together flour, salt, baking soda, baking powder and cinnamon. Set aside.
In a large mixing bowl, combine eggs, oil, applesauce, sugar, vanilla, and cantaloupe puree. Mix well. Stir in flour mixture and mix until just combined.
Pour into prepared pans and bake until desired doneness (approx. 45-55 minutes).
If baking muffins with bread, pull the muffins out after about 20 minutes.
Let rest in pan for five minutes before moving to cooling rack.
Serving Size: Makes 2 loaves or 1 loaf and 12 muffins
