    1c peas, cooked and cooled
    2c. carrots, shredded
    1 green or red bell pepper shredded
    2 medium radishes, shredded
    1/4c. shredded onion
    1/2 medium cucumber shredded
    1T olive oil
    1T lime juice
    1t salt
    2T Light mayo


Shred and combine all ingredients except mayo. Allow to sit for 15 minutes for flavors to combine. Add mayo and stir to combine. Serve at room temperature or chill.
