    3 tb butter, melted
    1 cup flaked coconut
    2 tsp curry powder
    4 boneless skinless chicken breast halves (6oz each)
    1/2 tsp salt
    1 cup apricot preserves, warmed (sugar free)


1. Place butter in a shallow bowl. In another shallow bowl, combine the coconut and curry powder. Dip chicken in btuter, then coat with coconut mixture.
2. Place in a greased 13x9in baking dish; sprinkle with salt. Bake, uncovered,at 350 degrees for 30-35 minutes or until a meat thermometer reads 170. Serve with preserves.
