Introduction

Ingredients

    1 Large (4 cups shredded) Summer Squash, shredded
    2 26 oz jars Chunky Pasta (any type will do actually)
    1 Yellow or White Onion, chopped
    2 Sweet Peppers (Red, Green or Orange) chopped
    2 Cloves Garlic, minced (or 2 Tbspn Garlic Powder)
    2 Tablespoons Basil
    2 teaspoons Salt
    2 cans (14 oz -- or 7 oz each can) Mushroom stems
    1 Tablespoon Olive Oil (to saute chopped veggies)
    3 Hot Dogs (any type will do but I used Bar S Bun Length Franks -- made with Chicken, Pork and Beef) sliced in circles
    Wheat Spaghetti Noodles - 1 12 oz package
    4 fluid oz Red Wine
    1/2 cup Parmesan Cheese, grated
    2 cups Shredded Cheddar Cheese (to put on top once served)




Directions

In a LARGE HEAVY COOKING POT: Saute in Oilve Oil chopped veggies (onions and peppers), put in the two jars of Chunky Tomato Sauce -- 52 oz (two jars of 26 oz each). Add shredded Summer Squash (4 cups) and stir all together and steam this with a lid for about 10 minutes. Stir occassionally. Add 4 oz red wine and stir. Continue steaming over medicm low heat for another 10 minutes. Now add your franks and Parmesan Cheese. Stir occasionally again to keep sauce from sticking to bottom of pan. Add dry ingredients. Simmer with lid one, but checking from time to time to see that it's not sticking at the bottom of the pan.

Cook Spaghetti Noodles according to directions. Drain noodles once done and place noodles (1/3 cup) on plate.

Spoon a 1/2 cup of Spaghetti Sauce over and enjoy with Garlic Bread and a salad of your choice.

Delicious and fun to think you're using your garden's veggies and this "gourmet" meal will satisfy the kids too with the hot dog rounds added for a bit of flavor to this very veggie dish. The Wheat noodles are especially good for you too.



Serving Size: 1/2 cup makes about 32 servings (you may freeze leftover)
