    16 oz. Beef Eye of Round Steak
    1 large green pepper
    1 large red pepper
    1 Vidalia Onion Sliced thin
    5 garlic cloves minced
    10 Medium mushrooms sliced
    3 T. Balsamic Vinegar
    1 1/2 c. Lowfat Low sodium Chicken Broth
    3 T. Corn starch
    1/2 C. Rocco's How Low Can you Go Lowfat Marinara
    1/2 c. Fat Free Evaporated Milk
    1/3 c. Chopped Chives


Heat up a cast iron skillet to medium high. Spray with Pam. Add Steak and brown on both sides about 4 minutes each side and then set aside. Spray pan with Pam again and saute onion, garlic, and mushrooms. Cut up peppers into rings. Add the meat into a spray slow cooker, and top with vegetables, and cook on low about 6 hours.Heat up the cast iron pan, add the balsamic vinegar, and scrape up the bits on the bottom of the pan. Mix cornstarch with chicken broth and add to the vinegar. Mix and cook to thicken. Add marnara sauce, and evaporated milk to the broth mixture, then put on top of the meat in the slow cooker and cook for another hour. Add the chopped chives and serve.
