Introduction

This makes 24 regular size muffins. It can also make 2 loaves, cut in 12 slices each, adjust baking time to 50-60 minutes. Great for using up abundant garden zucchini and sneaking it into picky kids. Ingredients

    2 and 1/2 cups grated zucchini
    1 and 1/2 cups unsweetened applesauce
    3/4 cup liquid egg white product
    2 tsp vanilla extract
    1 cup packed brown sugar
    3 cups whole wheat flour
    1/2 cup ground flaxseed meal
    3 tsp ground cinnamon
    1 tsp baking soda
    1 tsp salt
    1/4 tsp baking powder
    1 cup chopped pecans or walnuts

Directions

Mix zucchini, applesauce, egg whites, vanilla and sugar in large bowl until combined. Add flour, flaxseed meal, cinnamon, baking soda, salt, and baking powder. Stir in nuts. Pour into 2 paper-lined or sprayed 12-cup muffin tins or 2 greased loaf pans. Bake at 350 for 20-25 minutes for muffins, 45-60 minutes for loaves, or until a toothpick inserted in the center comes out clean.
