Number of Servings: 4


    1 cup bread crumbs
    1/2 cup grated parmesan
    3 cloves garlic, minced
    2 tbs Extra Virgin Olive Oil
    1/2 tsp salt
    gound pepper to taste
    4 boneless, skinless, chicken breasts (6-7 oz each, trimmed)
    1/4 cup miracle whip light
    1 tbs basil


Adjust oven rack to upper-middle position and preheat oven to 425. Combine bread crumbs, parmesan, olive oil, garlic, salt and pepper in a bowl. Pat chicken dry with paper towels. Place in 9x13 pan that has been sprayed with non-stick cooking spray. Combine basil and mayo. Spread mayo mixture evenly over chicken. Sprinkle bread crumbs over top of chicken, pressing lightly to adhere. Bake until crumbs are golden brown chicken is done. Approximately 30 minutes (took 30 minutes for mine).
Makes 4 large chicken breasts, can easily be cut in half and make 8 decent size portions.
