Ingredients

    4 eggs, beaten
    1 cup whole wheat flour
    1/4 tsp salt
    1 1/4 cup 1% milk
    2 Tbsp. olive oil

Directions

Beat the eggs. Add the flour and salt. Mix until smooth. Add milk and oil, beating until smooth

Pour about 1/4 of batter onto hot griddle, or omelet pan. These are thin and spread quickly. Cook until firm enough on the top to turn. Flip pancake and cook until done through. These cook quickly. The goal is a light golden brown on each side.

Serving Size: Makes 20 large pancakes - 1 pancake serving
