Introduction

This is my "comfort" food - Great to keep in the fridge and heat up when you are craving a "carb" fix! This is my "comfort" food - Great to keep in the fridge and heat up when you are craving a "carb" fix!
Number of Servings: 8

Ingredients

    2 cups Brown Rice
    1 cup Red Quinoa
    6 cups Water
    1 Stock Cube
    2 cups Mixed Veg [Frozen, Canned and/or Fresh]
    1 can Garbanzo Beans
    ½ cup Red Lentils
    Spice to Taste - Salt, Pepper, Marjoram, Savory, Celery Salt, etc
    1 tbsp Butter to each serving

Directions

Place all ingredients in large pot, except butter, and bring to a boil. Simmer for about 45 minutes, or until rice is done. Let sit for about 10-15 minutes before serving. Add a small amount of butter to the serving to give it a Risotto texture [optional]

Serving Size: Makes 8 1-cup servings
