    5 medium red potatoes, cut into 1" pieces
    1 1/2 cups sliced Portabello Mushrooms
    2 tbsp olive oil
    Thyme to taste
    Onion powder to taste
    Garlic powder to taste
    Black pepper to taste
    Salt to taste
    Oregano to Taste
    Herbes de Provence to taste


Preheat oven to 350. Slice potatoes and mushrooms. Place in medium bowl and toss with oil and herbs. Place on a slightly greased cookie sheet and roast for 30 minutes, or until golden. YUM. Makes 3 one-cup servings.
