    1 sleeve of graham crackers, finely crushed
    4 tablespoons butter, melted
    16 ounces light cream cheese
    3/4 cup of sugar
    3 tablespoons flour
    4 large eggs, separated
    1/4 cup milk
    2 teaspoons almond extract


Preheat oven to 325. Spray a springform pan with cooking spray. Combine the graham cracker crumbs and melted butter, press into bottom of pan. Whip cream cheese, orange zest, 1/2 cup of sugar, flour, egg yolks, milk and almond extract until smooth, set aside. Using a clean bowl and beaters, beat egg whites until soft peaks form. Gradually add the remaining sugar, continue beating until stiff peaks form. In small batches, add the two mixtures together. Pour over crust and bake uncovered for 45-50 minutes, or until center is set and golden brown. Allow to cook for ten minutes, remove pan collar and cool for three hours. Replace collar and refrigerate at least four hours.
