Ingredients

    3 green bell peppers, or the equivalent amount of smaller heirloom green peppers, seeded and halved
    1 tbs capers, well rinsed
    1-3 garlic cloves
    parsley
    salt
    pepper
    extra virgin olive oil

Directions

Cook peppers in pot of unsalted boiling water for 5 minutes. Drain and rinse with cold water.

Place peppers, capers, garlic, and parsley in food processor. Pulse until it starts to take on a saucey consistancy. Drizzle with olive oil while you pulse. Keep mixing until its smooth.

Season with salt and pepper. Serve on top of fresh pasta with asiago or parmesan cheese.

Store extra in the fridge.
