Number of Servings: 4


    2 cans of water-packed albacore tuna, drained well
    4 Hard boiled eggs
    1 cup finely diced celery
    1/4 cup drained capers
    3 Tbs finely diced shallot
    3/4 cup seedless grapes
    6 Tbs low fat mayonnaise
    6 Tbs fat free sour cream
    Pepper to taste
    4 lettuce leaves for serving
    24 grapes, six per servng for garnish on the side
    3 oz of chopped smoked almonds as garnish on top
    1 lemon cut in wedges for garnsh on the side


Put tuna in a bowl and coarsely chop two of the eggs. Cut remaining eggs in wedges and set aside. Add chopped eggs to bowl with tuna. Add celery, capers, onons and 3/4 cup of grapes to bowl. break tuna into smaller chunks and mix. Mix the mayonnaise and sour cream together with the pepper. Add to bowl and toss to mix.

Arrange lettuce on plates. Mound tuna salad on greens. Set half an egg's wedges alongside the salad. Garnish with remaning grapes, lemon wedge, and smoked almonds and serve.
