PB2 is a low fat powdered version of peanut butter. PB2 is a low fat powdered version of peanut butter.
Number of Servings: 12


    1 1/4 c. all purpose flour
    3/4 c. PB2 powder
    1 T. baking powder
    1/2 tsp. salt
    1/2 c. chopped walnuts
    1/2 c. unsweetened applesauce
    1 c. Splenda for baking
    3 egg whites
    1 1/3 to 1 1/2 c. ripe bananas, mashed - about 3 bananas


Preheat oven to 400. Blend flour, PB2, baking powder and salt together in a medium size mixing bowl. Mix in chopped nuts. In a second bowl, cream applesauce and Splenda until light and fluffy. Add eggs one at the time and beat well. Blend in the mashed bananas. Add wet ingredients to dry ingredients, stirring just enough to blend - about 20 seconds. Spoon muffin batter into greased muffin tins and bake for 20-25 minutes (less if using mini muffin tins) until muffins are golden brown and the top springs back when touched.
