    12 Sweet red bell peppers
    1 cup brown rice
    1 16oz can black beans
    1 bag frozen corn (birds eye steam fresh southwest)
    1 onion
    3 garlic cloves
    1 can chopped green chilies
    1 16oz can fire roasted tomatoes
    1tbsp chili powder
    1/2c green onion
    1c Mexican cheese


Preheat oven 350
Prepare brown rice according to package.

Cut tops off of peppers and clean insides out. Boil peppers and drain.

Dice onion and garlic.
Drain and rinse black beans and corn.
Drain green chilies and tomatoes.

Saute onion, garlic and green chilies until onion is translucent. Add black beans, corn, green onions and chili powder. Heat through. Add rice, tomatoes and cheese. Cook until cheese melts.

Spoon mixture into peppers. Bake 30 minutes.
