    2 cups converted white rice
    1 TBS chicken Oxo (Boullion)
    4 cups water
    1/4 cup lemon juice
    lemon zest from one lemon
    1 TBS olive oil
    1 cup chopped onion
    1 Tbs minced fresh garlic


Saute onion and minced garlic in olive oil in saucepan. Add rice, water, chicken boullion, and lemon juice to the pan. Cover and cook for 20 minutes. Add lemon zest just before serving. (Or cook in a rice cooker, adding the cooked onion and garlic at the beginning)
