Number of Servings: 5


    4 chicken sausages, sliced
    1 cup bell pepper (any color), chopped
    1 cup onion, chopped
    1 cup celery, chopped
    2 teaspoons minced garlic
    1 teaspoon dried basil
    1 teaspoon dried oregano
    1 teaspoon dried parsley
    i 15-ounce can fire-roasted tomatoes
    1 cup vegetable broth
    3 cups cooked brown rice or quinoa (Not included in nutrition facts)
    salt and pepper to taste


1) Spray a large skillet with cooking spray and place over medium-high heat.

2) Add sausages and cook until beginning to brown, approximately 5 minutes.

3) Add peppers, onions and celery and cook until vegetables are crisp tender, about 7 minutes.

4) Add garlic, basil, oregano and parsley and saute for an additional minute. Add tomatoes with juices and broth and bring to a low boil, then lower heat. Cover and simmer for 10 minutes.

5) Add cooked rice or quinoa (again, I didn't use it, but you can)and allow to absorb sauce and flavors, stirring and cooking for an additional 5 to 10 minutes. If you didn't use rice/quinoa, continue to simmer for 10 minutes covered. Season with salt and pepper to taste.
