    about 4 oz. sliced (and chopped) fresh mushrooms
    about half a cup shredded Parmesan cheese
    1.5 cups organic sodium-free chicken broth
    3 cloves garlic, minced
    0.5 cup brown rice
    3 tbs fresh flat-leaf parsley, chopped


Cook brown rice according to package directions.

Chop up your sliced mushrooms into smaller, more bite-sized pieces, mince your garlic and finely chop the parsley.
Pour the chicken broth into a skillet and add the mushrooms, parsley, and garlic. Simmer until all liquid is absorbed or evaporated.
Add to cooked rice. Add in cheese. Mix well.
