Ingredients

    Leeks, 4 leek ()
    *Potato, raw, 2 large (3" to 4-1/4" dia.) ()
    Sweet potato, cooked, baked in skin, without salt, 1 medium (2" dia, 5" long, raw) ()
    Baby Carrots, raw, 10 large ()
    Tomato, grape (3oz = appro 12 tomatoes), 1.5 oz ()
    Onions, raw, .75 large ()
    Garlic, 6 cloves ()
    *MORTON Sea Salt, Fine Salt, 1 tsp ()
    *Black Pepper, 0.5 tsp ()
    Olive Oil, 2 tbsp ()
    *Portabella Mushroom, 1 Large Cap = 85g, 2 serving ()
    Broccoli, fresh, .5 cup, chopped ()
    Cauliflower, raw, .5 cup ()

    Water, tap, 5 cup (8 fl oz) (remove)

Directions

add the Leeks, onion and 2 cloves of garlic, olive oil, salt and pepper to pan and fry until the onions and garlic are translucent. Add remaining ingredients to a large pot and bring to a boil. Boil for 20 mins, then add the Leek mixture and boil until the potatoes and carrots are soft. Blend in batches until all smooth and creamy!
