    2 1/2 cups whole wheat flour (divided)
    3 Tablespoons Vital Wheat Gluten
    1 Tablespoon instant yeast
    1 1/4 cups very warm tap water
    1 tsp. salt
    3 Tablespoons canola oil
    3 Tablespoons honey
    2 tsp. bottled lemon juice


In medium bowl whisk together 1 1/2 cups flour, wheat gluten, and yeast. Add warm water and whisk vigorously until dough springs back when pulled apart. Cover and rest 10 minutes. Stir in salt, oil, honey, and lemon juice until well mixed. Add and knead about 3/4 cups flour (more or less as needed) a little at a time. Stop kneading and adding flour when dough made into a ball holds it's shape and does not sag. Cover and rest 30 minutes. Punch down and shape into a loaf shape. Place in well-greased pan. Raise until doubled in size (I just know it's ready when it's the size I want my loaf to be). Bake at 350 for 35 minutes.
