Ingredients

    1 pound lean ground beef
    15 ounce can no salt added corn, rinsed, drained
    15 ounce can no salt added kidney beans rinsed and drained or 14.25 ounce can no salt added stewed tomatoes, undrained
    2 cups low sodium beef broth (1 cup if using stewed tomatoes)
    1 tsp ground cumin
    1 tsp chili powder
    1 tsp dried thyme, crumbled
    1 tsp garlic powder
    1 tsp onion powder
    .15 tsp pepper

Directions

serves 4; 1.5 cups per serving
Heat a large nonstick skillet over medium-high heat. Cook beef for 5-6 minutes, or until no longer pink, stirring occassionally. Put in a colander and rinse with hot water to remove excess fat; drain well. Wipe skillet with a paper towel.
Return beef to skillet and add remaining ingredients. Bring to a simmer over medium-high heat. Reduce heat and simmer, uncovered, for 8 to 10 minutes, or until flavors are blended, stirring occassionally.
