Ingredients

    2 cups quick oats (gluten free)
    1 cup teff flour
    1/4 cup raisins
    1/4 cup ollive oil
    1/2 cup maple syrup
    1/2 cup plain no fat yogurt
    1 tablespoon arrowroot powder
    1 1/2 tsp. vanilla extract
    3/4 tsp. cinnamon
    1/4 tsp. salt

Directions

1. Preheat oven to 375 degrees F. Oil a muffin tin or line with muffin liners.
2. Put all of the ingredients in a large bowl. and mix until thoroughly combined. The batter will be thick.
3. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
4. Balke for about 25 minutes, until a toothpick inserted in the center of a muffin comes out clean.



Serving Size: Makes 12 small muffins.
