Introduction

A tasty muffin filled with healthy goodness like whole wheat flour, oats, pureed white beans and pumpkin! Make a HUGE batch and freeze them for breakfast or snacks. Ingredients

    Combine in a large bowl:
    4 1/2 cups whole wheat flour
    2 1/4 cups rolled oats, regular or quick
    1 Tbsp baking soda
    1 Tbsp baking powder
    1 1/2 tsp salt
    1 Tbsp Pumpkin Pie Spice (optional)
    2 cups sugar (or can use 1 1/2 cup honey or 3/4 cup each frozen concentrated apple and pineapple juice. ADD with WET ingredients)

    Add these wet ingredients to the dry:
    1 15 oz can white beans, pureed in blender or food processor
    1 1/2 cup applesauce, unsweetened
    1 1/2 cup milk (or add 4 1/2 Tbsp non-instant powdered milk to dry ingredients and 1 1/2 cup water to wet)
    1 1/2 cup canned pumpkin (one small can)
    1/3 cup canola (vegetable) oil
    4 eggs (original recipe calls for 6 egg whites)

    Stir together:

    Add:
    1/2-1 cup mini chocolate chips


Directions

Preheat oven to 350. Spray muffin tins--if using papers spray them too so the muffins come out of the paper!

Spoon mixture into tins. I use a 1/4 cup ice cream scoop. Makes 48 muffins. Bake for 15-20 minutes for regular sized muffins or 10-12 minutes for mini sized muffins.

Freeze muffins in zip-lock bags. Warm in microwave for about 20-30 seconds.
