A healthier alternative to mashed potatoes! A healthier alternative to mashed potatoes!
Number of Servings: 6


    1 pound turnips peeled and cut up ( 3 cups)
    1/4- 1/2 c onions chopped (based on your taste)
    1 Tbsp sugar
    3 Tbsp I cant believe its not butter light
    1/2 tsp salt
    pepper to taste
    3/4 c bread crumbs ( 1 slice)
    2 eggs


Cook turnips and onions- boil in water until soft. Drain and butter, sugar, salt, and pepper. Beat with electric mixer or potato masher until smooth. Add bread crumbs and eggs and beat well. Turn into 1 quart casserole that has been greased or sprayed with pam.

Bake uncovered for 25-40 minutes. A thin coating of shredded cheddar is amazing. But not included in calories.
