Number of Servings: 4


    4 large eggs
    2 cans drained chopped spinach (2.5 cups cooked spinach)
    2 cups low fat cheddar cheese, shredded
    8 ounce can mushrooms, drained
    2 cups nonfat cottage cheese
    2 spring onions chopped
    1 tsp black pepper


Divide spinach into 8 ramekins. Add mushrooms and spring onions. Mix together eggs, cheese, cottage cheese, and pepper. Pour on top of spinach/mushroom mixture.
Bake at 325 for 60 minutes.
