Introduction

Great substitute for bread - works awesome for Paleo or Slow Carb eating especially. Great substitute for bread - works awesome for Paleo or Slow Carb eating especially.
Number of Servings: 12

Ingredients

    1 dozen eggs
    2 tsp minced garlic
    1/4 cup Parmesan
    3 packages of frozen spinach, thawed and drained

Directions

Pre-heat oven to 350 degrees
Butter a loaf pan (or use butter pam, but butter does add a nice little flavor).
Mix all ingredients in a bowl, be sure well-mixed.
Transfer to loaf pan, place in oven on a baking sheet.
Bake for 1hr 15 mins.

Enjoy!! I like it with butter and cinnamon or for sandwiches especially.

(Note: Be SURE to well drain your spinach or you get soggy bread where the egg has migrated down to the bottom a bit!)

Serving Size: Makes 12 slices of bread or 1 loaf.
