    1 C Onions, chopped raw
    1 C Carrots, chopped raw
    1 C Celery, chopped raw
    2 Michelob Ultra Beer
    4 C Chicken Broth or Bouillon
    1/2 C Promise Fat Free Margarine
    1/2 C Flour, white
    2 C Cheez Whiz
    2 C Cheddar or Colby Cheese, Low Fat
    2 C Milk, 1% nonfat
    1/4 c. chopped parsley
    1 tbsp. Accent
    Dash Tabasco
    Salt & pepper to taste


In a large kettle, spray no calorie spray; add onions, carrots and celery and saute until vegetables are soft. Add beer and chicken broth and bring to boil. turn heat back to simmer. In the meantime, melt butter, add the flour and stir constantly for 2 minutes. Whisk this into the simmering broth and whisk until smooth. Add cheese and cheese sauce and continue to simmer for 10 minutes, whisking thoroughly. Add milk, add seasoning and adjust to your desired taste. Ladle soup in soup bowls. Yield: 12 / 12 ounce servings.
If you like a smoother soup, puree in blender or with stick blender.
