This soup is really good! I kept thinking the whole time I was eating that maybe a few more potatoes would make it better but since I ate two bowls, it might be fine like it is. lol This soup is really good! Number of Servings: 10

Ingredients

    6 generous cups potatoes, peeled and diced
    1/4 cup onion, chopped
    1/4 cup celery, chopped
    1 large garlic clove
    1/2 cup shredded carrot
    1 quart chicken broth
    1/2 stick butter
    12oz can Pet milk...I used regular, because that's what I had
    1/2 teaspoon black pepper
    1 tsp Tony Cachere's Creole Seasoning
    1 teaspoon garlic powder
    1 teaspoon onion powder
    salt to taste

Directions

Peel and chop potaotes. Start potatoes cooking in broth.

Melt butter over low heat (don't scorch), add onions, celery, carrots and garlic and cook til soft. Add to potatoe mixture along with seasonings. Bring to a boil, stirring once in awhile. When potatoes are soft, reduce heat and add milk. Taste the soup and add salt to taste. Hold on very low heat until ready to serve.

Serving Size: 1 cup (yields approx 10 cups)
