    4 Medium Potatoes, diced
    1 Stalk Celery, finely sliced
    2 Chicken bouillon cubes
    2.5 cups water
    3 Tbsp blue bonnet light margarine
    2 cups Skim Milk
    3 Tbsp flour
    1 small onion, diced


Add potatoes and celery to 4 quart pan, cover with 2.5 cups of water. Once it begins to boil add 2 bouillon cubes. Boil until potatoes and celery are tender, usually 20 minutes or so. When potatoes are near tender, melt margarine in a separate pan. Add diced onions. While onions are cooking, add 2 cups milk to potato/celery/broth and reduce heat. When onions become tender add 3 tbsp flour, kind of shake over pan. Stir together to make a paste like texture. Add this to 4 quart pan and stir. The soup with thicken quickly. Use salt, pepper and dried parsley and serve.

Serving Size: Makes about 8 1-cup servings.
