Introduction

Ingredients

2 pieces of boneless chicken breast
1 can (4oz) of diced green chilies
2 cans of enchilada sauce, mild green
One package of cream cheese 1/3 less fat
salsa 4 tbsp
one package of flour tortillas
mexican cheese
Directions
Cut chicken into bite size pieces.
Dice 1 cup of onion and cook in pan with chicken until completely cooked.
Add in the whole bar of cream cheese and one can of diced green chiles and 4 tbsp of pico de gallo(or any salsa)
Heat on low until cheese is melted.
Pour some sauce in bottom of 9x13 pan to prevent sticking. put chicken mixture into tortilla evenly and roll up and place in pan. Cover tops of tortilla with the remaining sauce. cook for 18 min at 350. sprinkle with cheese and bake for 2-3 more minutes or until cheese is melted.
Serving Size: makes 10 enchiladas. Serving size 1 enchilada
