    1 1/2 C TVP
    1 1/2 C boiling vegetable broth
    3 T dried minced onion, rehydrated with water
    1 T dried parsley
    1 T Italian seasoning
    1 tsp. lite salt
    1/2 tsp. black pepper
    4 ounces fresh mushrooms, diced
    1 egg( or use egg replacer to make vegan)
    1 C breadcrumbs
    1/4 C ketchup


1. Preheat oven to 375 degrees F. Mix TVP with boiling vegetable stock in a medium size bowl; let sit for 10 minutes or until all liquid has been absorbed.
2. Combine all ingredients except ketchup in bow and pour into loaf pan or baking dish.
3. Bake for 35-40 minutes. Spread ketchup over top of loaf and bake an additional 10 minutes. Cool for 5-10 minutes Serve with more ketchup on the side, if desired.
