Introduction

Ingredients

    olive oil spray
    1/2 C. minced onion
    1 1/2 C. Hash browns (shredded potatoes) uncooked
    dash of garlic powder
    salt and pepper to taste
    1 C. egg whites (egg beaters)
    2 Tbsp diced onions
    1/4 C. diced bell peppers
    1/4 C. reduced fat cheese
    1 C. diced ham

Directions

Preheat oven to 375.
Spray muffin pans with olive oil spray.
Combine hasbrowns , onions, garlic powder, salt and pepper. Fill muffin cups with 1/4 C potatoes pressing up along the sides and bottom to form a cup. Bake for 30-35 mins. until brown.
While the cups are cooking, combine everything else.
Fill cups with about 2 1/2 - 3 Tbsps of egg mixture and bake an additional 20 mins. or until fully cooked.

Serving Size: makes 6 muffins
