    2-3 mashed over ripe bananas
    cup brown sugar
    1/3 cup margarine
    1 egg
    1 teaspoon vanilla
    1 cup sifted all purpose flour
    cup wheat germ (I used bran flakes or any kind of cereal crunched up)
    1 tsp. baking powder
    1 tsp. baking soda
    cup water


Into a beater bowl measure bananas, brown sugar and margarine. Beat for 5 minutes. Add eggs and vanilla and beat in. Add flour, cereal, baking powder and soda and water. Beat another 5 seconds. Scrape down sides and give another couple stirs.
Spoon into 12 buttered muffin tins. Mix together white sugar and cinnamon and sprinkle evenly over the unbaked muffins. Bake at 350 degrees 15 20 minutes. Serve warm from the oven.

Serving Size: makes 12-18 medium muffins
