    1 pkg Gelatin
    1 500 g tub 1% Cottage Cheese
    1/4 C Ground Flaxseed
    1/2 C Splenda
    1/2 C Fine Shredded Coconut
    2 tsp Vanilla Extract


Place 1/4 cup of ground flaxseed in 9" X 13" pan as this will form the crust. Spread evenly by tapping gently. Mix the package of gelatin into 1/2 cup boiling water to dissolve. Next pour the tub of cottage cheese into the blender along with coconut, slpenda ( or other sweetener ), and vanilla. Add gelatin mixture last and blend all till nice and creamy. Pour or scoop gently into waiting pan and refrigerate for 1 -2 hours until set. Cut into 8 even squares. Top each piece with any fresh fruit desired. I often use this a s a healthy snack as it is very satisfying with the high protein contant.
