    1 tsp. olive oil
    1/2 yellow onion, diced
    1/2 yellow or orange bell pepper, seeded and diced
    1 tsp. sea salt
    1/4 tsp. freshly ground pepper
    2 cloves garlic, minced
    1/2 tsp. ground cumin
    1/2 tsp. chili powder
    1/8 tsp. cayenne pepper
    1 cup red quinoa, rinsed and drained
    2 cups vegetable or chicken broth
    Juice of 1/2 lime (about 1-2 Tbsp.)
    1/4 cup chopped scallions
    1/4 cup chopped fresh cilantro, plus more for garnish


1. Heat Olive oil in a medium saucepan over high heat. Add onion, pepper, salt and pepper, and saute until soft, 3 minutes. Stir in garlic, cumin, chili powder and cayenne, and cook for one more minute. Stir in quinoa and broth.

2. Cover, reduce heat and simmer for 15-20 minutes until all liquid is absorbed and quinoa is plumped up. Remove from heat, fluff with fork, and let sit for 5 minutes, covered.

3. Stir in lime juice, scallions and cilantro; serve.
