Ingredients

    1 Yellow Onion, roughly chopped
    1 Garlic clove, smashed
    1 cup loosely packed parsley
    1 cup loosely packed basil
    3 Tbsp. nutritional yeast
    1 Tbsp. Dijon Mustard
    1 egg white
    1tsp. garlic powder
    1tsp. onion powder
    1tsp. chili powder
    1/2 tsp. celery seed
    1/2 Tbsp. sea salt
    1/2 tsp. freshly ground black pepper
    1 x 14.5 oz. can great Northern white beans, drained and rinsed
    1 cup cooked brown rice
    1/2 cup oat bran
    2 Tbsp. flaxseed
    1 cup whole brain breadcrumbs
    Cooking spray
    6 whole grain hamburger buns

Directions

1. Add onion, garlic, parsley, basil to a food processor and pulse to combine. Add nutritional yeast, mustard, egg white, garlic powder, onion powder, chili powder, celery seed, salt and pepper, and pulse until finely chopped. Add white beans and pulse until combined, but still chunky.

2. Transfer mixture to a bowl and add brown rice, oat bran, flaxseed meal and breadcrumbs. If mixture is too moist and doesn't easily hold shape of a patty, add more breadcrumbs until desired consistency is reached. Shape mixture into 6 patties, each 4 inches in diameter.

3. Heat a large nonstick skillet over medium-low heat and coat with spray. Cook patties 3-5 minutes on each side until browned. For a crisper burger, cook an additional 5 minutes in a preheated 400 degree oven or toast in toaster oven.

4. Serve hot on a whole grain bun (skip if following stripped) topped with your favorite healthy fixings.
